Job Summary

We are seeking a highly skilled and creative Head Sushi Chef with expertise in Omakase and a deep understanding of Nikkei cuisine, blending Japanese and Peruvian culinary traditions. The ideal candidate will lead our Sushi Kitchen team, crafting exceptional dishes and providing an unforgettable dining experience.



Head Sushi Chef Qualifications:

  • Experience: Minimum of 2 years as an upscale Sushi Chef in a high-volume kitchen
  • Passion for Fusion Cuisine: Genuine love for food and culinary craftsmanship, especially in Japanese cuisine
  • Leadership Skills: Strong ability to lead, inspire, and manage a team
  • Cost Management: Familiarity with labor and food cost management principles
  • Hands-On Expertise: Proven experience in leading a sushi team and creating exceptional Sushi and Omakase dishes
  • Brand Integration: Ability to integrate seamlessly into an established brand and contribute to its growth
  • Excellent knife skills and attention to detail


Head Sushi Chef Key Responsibilities:

  • Team Collaboration: Work closely with restaurant staff to ensure smooth daily operations
  • Leadership & Supervision: Oversee back-of-house managers, ensuring cleanliness, organization, and efficiency
  • Staffing & Training: Assess staffing needs, lead hiring processes, provide training, manage scheduling, and conduct performance evaluations
  • Administrative Management: Handle inventory, ordering, and purchasing to maintain optimal stock levels
  • Performance Standards: Establish and uphold high performance standards for the kitchen team
  • Operational Efficiency: Collaborate with executive management and ownership to optimize restaurant operations
  • Guest Satisfaction: Ensure exceptional guest experiences by delivering consistent, high-quality dishes
  • Quality Control: Monitor food quality and freshness, adhering to standard recipes
  • Menu Development: Contribute to menu planning and creation of daily specials
  • Hands-On Operations: Assist in day-to-day kitchen tasks, ensuring smooth and efficient service
