Job Summary
We are looking for an enthusiastic, quality-driven Chef de Cuisine to lead the culinary team at our upscale, sophisticated French brasserie. You will lead a phenomenal team in an upscale, high volume restaurant with an emphasis on outstanding food and service in a sophisticated, yet comfortable environment. The Chef de Cuisine is responsible for all aspects of Culinary operations including food preparation, menu execution, ordering/receiving, vendor relations, hiring, and training. Chef de Cuisine Qualifications + Responsibilities:
- 5+ years of experience as a Chef de Cuisine or Executive Chef in a high volume, upscale, scratch kitchen environment
- 10 years of experience in Culinary leadership roles, demonstrating progression and growth of responsibilities
- Expertise with French cuisine is required
- A results-driven operator with a track record of achieving financial targets and growing sales
- Commitment to providing exceptional guest service, and creating memorable experiences for all patrons
- Expertise in staff development, including coaching, training, and leading teams, as well as recruiting and hiring
- Highly skilled and comfortable utilizing technology platforms such as POS, inventory management software, scheduling/employee communication platforms
- Direct oversight and management of all Culinary operations, including Sous chef, line cooks, prep team, and porters
- Responsible for effective cost management of food and labor
- The schedule includes working nights, weekends, and holidays
- Hands-on management style, comfortable (and happy!) working shoulder to shoulder with their team
- Strong roots in the Chicago restaurant community are required
