Sous Chef Qualifications
- Bachelor's degree (Mandatory)
- At least two years of culinary and supervisory experience in a high-volume food production environment
- Multi-unit supervisory experience (preferred)
- Strong leadership and oral/written communication skills
- Experience with computerized menu management systems and knowledge of office and industry software applications
- Ability to work flexible hours
- Proven problem-solving ability
- Commitment to high-quality food procurement, production, and services
Sous Chef Responsibilities
- Oversee all culinary operations for the centralized kitchen (including catering)
- Responsibility for the organization, coordination, and supervision of the preparation of food production, quality, portion control, and sanitation/safety standards
- Training, coordinating, and evaluating the work of the production staff
- Product procurement as well as recipe and product development
- Plan, develop and supervise the production/culinary team using a comprehensive menu management program
- Develop menus per customer tastes, nutritional needs, ease of preparation, and established procedures
- Works with senior management to develop strategic plans for food preparation in non-kitchen venues, including the rental and organization of field kitchens
- Control expenses to ensure financial goals
